NATIONAL™ 3700 is described as a unique emulsion stabilizing starch, and it is derived from waxy maize. NATIONAL™ 3700 is recommended as a replacement for gum arabic in flavor emulsions. NATIONAL™ 3700 is suggested as a stabilizer for other food emulsions. The starch is cold water soluble, which means it can dissolve in cold water. NATIONAL™ 3700 displays very good viscosity stability. The product is available under Ingredion Incorporated’s TRUETRACE® Identity Preserved Program for non-GM products.
