PURITY® 87 is derived from tapioca, which is a starchy substance extracted from the roots of the cassava plant. This modified food starch is especially suited for use in low pH food
systems. Low pH environments, which are acidic, can present challenges
for some ingredients, and this starch is designed to perform well under
such conditions. PURITY® 87 is recommended for use in low pH food systems where high temperature and shear conditions are encountered. The product is produced under Ingredion Incorporated’s TRUETRACE® Identity Preserved Program for non-GM products.
