ULTRA-SPERSE® 3 is described as a high-performance, cold water swelling
(CWS) starch. This means that it can disperse and swell in cold water,
which is a useful property in various applications. The starch is derived from tapioca, a root vegetable known for its starchy content. ULTRA-SPERSE® 3 exhibits many properties of a modified cook-up starch. The starch is noted for having a very bland flavor profile, indicating
that it is unlikely to contribute strong flavors to the final product. ULTRA-SPERSE® 3 exhibits excellent dispersibility, meaning it can mix well with liquids without forming lumps. The starch imparts superior sheen, clarity, and smoothness when compared to traditional pregelatinized starches. The product is produced under Ingredion Incorporated’s TRUETRACE®
Identity Preserved Program for non-GM products, confirming that it is
